What is a Skirt Steak?

Skirt steak is a cut of beef steak from the plate area of a cow. It is long, flat, and prized for its flavor rather than tenderness. It is not to be confused with hanger steak, a generally similar adjacent cut also from the plate.

Where This Cut Comes From

A portion of the leg, which is used extensively for movement. As a result, it is typically cut into cross sections called Shank Cross-Cuts which are braised to make flavorful, fork-tender dishes such as Osso Buco.

Best Cooking Method

Ideal for marinating and grilling or sliced thin and stir-fried. Grass Fed is best when cooked low and slow; you should sear the outside on a grill or skillet, and then transfer to the oven to continue cooking until desired doneness is reached.
